Description

Delicious and nutritious baked chicken tacos packed with flavor, low in calories, and perfect for the whole family.


Ingredients

  • 2 boneless, skinless chicken breasts, cut into thick slices
  • 1.5 teaspoons salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander seed
  • 2 teaspoons smoked paprika
  • 1 tablespoon olive oil
  • 1 avocado, diced
  • 2 medium tomatoes, diced
  • 1/4 onion, finely diced
  • Juice of 1/2 lime
  • 1/4 teaspoon salt
  • 4 oz low-fat Greek yogurt
  • 1/3 cup cilantro leaves
  • 1 garlic clove, roughly diced
  • 12 small low-carb or regular tortillas
  • Hot sauce or salsa for serving

Instructions

  1. Cut the chicken breasts into 1-2 cm thick slices. Sprinkle with salt, garlic powder, onion powder, oregano, cumin, coriander, smoked paprika, and olive oil. Toss to coat.
  2. Preheat air fryer to 400°F (200°C). Add half of the chicken, ensuring not to overlap. Air fry for 12 minutes, flipping halfway through. Rest and slice after cooking.
  3. Preheat oven to 400°F (200°C). Bake the remaining chicken on a greased tray for 15-20 minutes, flipping halfway. Rest and slice after cooking.
  4. Blend yogurt, cilantro, garlic, and salt until smooth for the cilantro sauce. Chill for a thicker consistency.
  5. Mix diced avocado, tomatoes, onion, lime juice, and salt to make the salsa. Set aside.
  6. Assemble tacos by placing 1-1.5 oz of chicken in each tortilla, adding salsa, drizzling with cilantro sauce, and finishing with hot sauce if desired.

Notes

Make sure to let the chicken rest after cooking to maintain that juicy texture!
