Description

A quick and nutritious garlic herb foil baked salmon that combines rich flavors and is easy to prepare, perfect for weeknight dinners.


Ingredients

Scale
  • 1 (2 lb/1 kg) boneless side of Salmon
  • 4 tbsp Unsalted Butter, softened
  • 3 large cloves of Garlic, finely diced
  • 1 tbsp Fresh Chives, finely diced
  • 1 tbsp Fresh Dill, finely diced
  • 1 tbsp Fresh Parsley, finely diced
  • 3/4 tsp Salt (adjustable)
  • 1/4 tsp Black Pepper
  • Lemon Wedges, to serve

Instructions

  1. Bring the salmon close to room temperature by taking it out of the fridge about 10 minutes beforehand and preheat the oven to 190C/375F.
  2. In a small mixing bowl, combine the softened butter, garlic, chives, parsley, dill, salt, and pepper. Mix until well combined.
  3. Lay two large sheets of foil in a cross pattern on a baking tray, and place the salmon skin-side down in the center, patting it dry.
  4. Spread the herb butter mixture evenly over the salmon.
  5. Fold the sides of the foil to create a tent around the salmon, ensuring it does not touch the fish.
  6. Place the tray in the oven for 15–20 minutes until nearly cooked through but slightly undercooked in the thickest part.
  7. Carefully crumple the foil around the salmon, spoon over any melted butter, and broil for about 5 minutes until the garlic turns lightly brown.
  8. Serve immediately with leftover butter, a sprinkle of salt, and lemon wedges.

Notes

Use fresh herbs for better flavor and be cautious not to overcook the salmon.
