Description
A quick and nutritious garlic herb foil baked salmon that combines rich flavors and is easy to prepare, perfect for weeknight dinners.

- 1 (2 lb/1 kg) boneless side of Salmon
- 4 tbsp Unsalted Butter, softened
- 3 large cloves of Garlic, finely diced
- 1 tbsp Fresh Chives, finely diced
- 1 tbsp Fresh Dill, finely diced
- 1 tbsp Fresh Parsley, finely diced
- 3/4 tsp Salt (adjustable)
- 1/4 tsp Black Pepper
- Lemon Wedges, to serve
Instructions
- Bring the salmon close to room temperature by taking it out of the fridge about 10 minutes beforehand and preheat the oven to 190C/375F.
- In a small mixing bowl, combine the softened butter, garlic, chives, parsley, dill, salt, and pepper. Mix until well combined.
- Lay two large sheets of foil in a cross pattern on a baking tray, and place the salmon skin-side down in the center, patting it dry.
- Spread the herb butter mixture evenly over the salmon.
- Fold the sides of the foil to create a tent around the salmon, ensuring it does not touch the fish.
- Place the tray in the oven for 15–20 minutes until nearly cooked through but slightly undercooked in the thickest part.
- Carefully crumple the foil around the salmon, spoon over any melted butter, and broil for about 5 minutes until the garlic turns lightly brown.
- Serve immediately with leftover butter, a sprinkle of salt, and lemon wedges.
Notes
Use fresh herbs for better flavor and be cautious not to overcook the salmon.
