Description

Delicious and nutritious breakfast muffins packed with cottage cheese, vegetables, and turkey sausage.


Ingredients

  • 1 lb turkey breakfast sausages (removed from the casing)
  • 4 eggs
  • ¼ cup milk
  • 1 cup 2% cottage cheese
  • 1 tbsp olive oil
  • 1 tbsp maple syrup
  • 1.5 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 3 cups chopped vegetables (broccoli, spinach, etc.)
  • 3 green onions (sliced finely)
  • 1 cup cheddar cheese (shredded)

Instructions

  1. Preheat your oven to 400°F.
  2. Cook the sausages in a medium skillet over medium-high heat until browned. Set aside to cool.
  3. In a large mixing bowl, whisk together eggs, milk, cottage cheese, olive oil, and maple syrup.
  4. Add flour, baking powder, and salt to the bowl and mix well.
  5. Fold in cooked sausages, chopped vegetables, green onions, and half of the shredded cheese.
  6. Divide the batter evenly between 12 muffin cavities and top with remaining cheese.
  7. Bake for 23-27 minutes until golden brown and a toothpick comes out clean.

Notes

Wrap muffins in plastic wrap or store in an airtight container. They can be refrigerated for up to a week or frozen for three months. Reheat in the microwave or oven before serving.
