Delicious and nutritious breakfast muffins packed with cottage cheese, vegetables, and turkey sausage.
Ingredients

- 1 lb turkey breakfast sausages (removed from the casing)
- 4 eggs
- ¼ cup milk
- 1 cup 2% cottage cheese
- 1 tbsp olive oil
- 1 tbsp maple syrup
- 1.5 cups all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- 3 cups chopped vegetables (broccoli, spinach, etc.)
- 3 green onions (sliced finely)
- 1 cup cheddar cheese (shredded)
Instructions
- Preheat your oven to 400°F.
- Cook the sausages in a medium skillet over medium-high heat until browned. Set aside to cool.
- In a large mixing bowl, whisk together eggs, milk, cottage cheese, olive oil, and maple syrup.
- Add flour, baking powder, and salt to the bowl and mix well.
- Fold in cooked sausages, chopped vegetables, green onions, and half of the shredded cheese.
- Divide the batter evenly between 12 muffin cavities and top with remaining cheese.
- Bake for 23-27 minutes until golden brown and a toothpick comes out clean.
Notes
Wrap muffins in plastic wrap or store in an airtight container. They can be refrigerated for up to a week or frozen for three months. Reheat in the microwave or oven before serving.
