Description

These high protein muffins are delicious, nutritious, and perfect for busy mornings or as an afternoon snack. Made with wholesome ingredients like cottage cheese and blueberries.


Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1 cup rolled oats
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup fresh or frozen blueberries
  • Pinch of salt

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine the cottage cheese, eggs, honey or maple syrup, and vanilla extract. Mix well until smooth.
  3. In another bowl, mix together the rolled oats, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined—don’t overmix!
  5. Gently fold in the blueberries, making sure they’re evenly distributed.
  6. Divide the batter evenly among the muffin liners, filling each about three-quarters full.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool for a few minutes before transferring to a wire rack.

Notes

For extra moisture, use full-fat cottage cheese. You can reduce sweetness by cutting back on honey and substituting with mashed banana. Enjoy your muffins with tea, coffee, or on their own!
