Description

A delicious and nutritious wrap filled with tender chicken, vibrant veggies, and a crunch from tortilla chips, perfect for weeknight meals and packed lunches.


Ingredients

Scale
  • 2 whole wheat tortillas
  • 1 cup cooked chicken, shredded
  • 1/2 cup Greek yogurt
  • 1 cup fresh spinach, chopped
  • 1/2 cup bell peppers, diced
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup lettuce, shredded
  • 1/4 cup salsa
  • Salt and pepper, to taste
  • 1/4 cup tortilla chips, crushed

Instructions

  1. In a bowl, combine the shredded chicken, Greek yogurt, spinach, bell peppers, cheese, and salsa. Season with salt and pepper.
  2. Lay one tortilla flat and spread half of the chicken mixture in the center. Sprinkle with crushed tortilla chips, lettuce, and additional salsa if desired.
  3. Fold in the sides of the tortilla and roll it up like a burrito. Repeat with the second tortilla.
  4. Heat a skillet over medium heat and grill the wrap for 2-3 minutes on each side until golden brown.
  5. Slice in half and serve immediately or wrap in foil for storage.

Notes

For extra flavor, add a squeeze of lime juice or experiment with different cheese blends.
