Ingredients

- 2 whole wheat tortillas
- 1 cup cooked chicken, shredded
- 1/2 cup Greek yogurt
- 1 cup fresh spinach, chopped
- 1/2 cup bell peppers, diced
- 1/2 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup lettuce, shredded
- 1/4 cup salsa
- Salt and pepper, to taste
- 1/4 cup tortilla chips, crushed
Instructions
- In a bowl, combine the shredded chicken, Greek yogurt, spinach, bell peppers, cheese, and salsa. Season with salt and pepper.
- Lay one tortilla flat and spread half of the chicken mixture in the center. Sprinkle with crushed tortilla chips, lettuce, and additional salsa if desired.
- Fold in the sides of the tortilla and roll it up like a burrito. Repeat with the second tortilla.
- Heat a skillet over medium heat and grill the wrap for 2-3 minutes on each side until golden brown.
- Slice in half and serve immediately or wrap in foil for storage.
Notes
For extra flavor, add a squeeze of lime juice or experiment with different cheese blends.
