- 1/4 cup black beans, rinsed and drained
- 1 oz shredded cheese (Mexican blend or cheddar)

Instructions
- Blend the cottage cheese and enchilada sauce in a bowl until smooth.
- In another bowl, fold the shredded chicken and taco seasoning into the cottage cheese mixture.
- Gently fold in diced red bell pepper, corn, and black beans.
- Divide the mixture into two microwave-safe bowls and sprinkle shredded cheese on top.
- Microwave for 1 to 2 minutes until heated through.
- Garnish with chopped cilantro, avocado slices, and a dollop of Greek yogurt or sour cream.
Notes
