Description

A comforting dish of baked eggs surrounded by creamy feta, perfect for breakfast or brunch.


Ingredients

Scale
  • 100 grams feta cheese
  • Drizzle of extra virgin olive oil
  • 8 large eggs
  • Salt and pepper (to taste)

Instructions

  1. Preheat the oven to 400F (200C).
  2. Add the block of feta to the middle of an 8 by 8 inch baking dish.
  3. Drizzle the dish and feta with olive oil.
  4. Crack the eggs into the baking dish around the block of feta, and season with salt and pepper.
  5. Bake for 20-22 minutes or until the eggs have set.
  6. Stir the warm feta together with the eggs before serving.

Notes

Serve with toast, pitas, or alongside crispy bacon for a complete meal. Store leftovers in the fridge for up to 3 days.
