Description
A comforting dish of baked eggs surrounded by creamy feta, perfect for breakfast or brunch.
Ingredients
Scale
- 100 grams feta cheese
- Drizzle of extra virgin olive oil
- 8 large eggs
- Salt and pepper (to taste)
Instructions
- Preheat the oven to 400F (200C).
- Add the block of feta to the middle of an 8 by 8 inch baking dish.
- Drizzle the dish and feta with olive oil.
- Crack the eggs into the baking dish around the block of feta, and season with salt and pepper.
- Bake for 20-22 minutes or until the eggs have set.
- Stir the warm feta together with the eggs before serving.
Notes
Serve with toast, pitas, or alongside crispy bacon for a complete meal. Store leftovers in the fridge for up to 3 days.
