Description

A comforting baked egg dish with fresh spinach and creamy feta, perfect for breakfast or dinner.


Ingredients

  • 3 teaspoons olive oil
  • 34 cups fresh spinach, washed
  • 1 whole egg
  • 1 ounce crumbled feta
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. In a pan, heat 1 teaspoon of olive oil over medium heat. Add the spinach and sauté for 2-3 minutes until wilted.
  3. Transfer the spinach to a heatproof dish and drizzle with another 2 teaspoons of olive oil.
  4. Crack the egg over the spinach, keeping the yolk intact. Sprinkle with feta, salt, and pepper.
  5. Bake in the preheated oven for 18-20 minutes until the egg whites are set.
  6. Serve warm and enjoy!

Notes

For added flavor, sauté garlic or onion with the spinach, and consider using different cheeses for variety.
