A comforting baked egg dish with fresh spinach and creamy feta, perfect for breakfast or dinner.
Ingredients

- 3 teaspoons olive oil
- 3–4 cups fresh spinach, washed
- 1 whole egg
- 1 ounce crumbled feta
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat your oven to 350°F (180°C).
- In a pan, heat 1 teaspoon of olive oil over medium heat. Add the spinach and sauté for 2-3 minutes until wilted.
- Transfer the spinach to a heatproof dish and drizzle with another 2 teaspoons of olive oil.
- Crack the egg over the spinach, keeping the yolk intact. Sprinkle with feta, salt, and pepper.
- Bake in the preheated oven for 18-20 minutes until the egg whites are set.
- Serve warm and enjoy!
Notes
For added flavor, sauté garlic or onion with the spinach, and consider using different cheeses for variety.
