- 1 cup whole wheat flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 cup coconut sugar
- 1/2 cup unsweetened applesauce
- 1/4 cup almond milk
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 2 tbsp melted coconut oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, whisk together the whole wheat flour, baking powder, salt, and coconut sugar.
- In another bowl, combine the unsweetened applesauce, almond milk, vanilla extract, and melted coconut oil.
- Pour the wet ingredients into the dry ingredients and gently fold until just combined. Avoid overmixing.
- Spoon the batter into mini muffin tins, filling each cup about two-thirds full.
- Bake for about 15-18 minutes, or until golden brown.
- Roll the warm churro bites in a mixture of cinnamon and sugar before serving.
- Allow to cool slightly on a wire rack before serving.
