Description

Delicious and guilt-free churro bites that are baked, not fried, making them a perfect snack or dessert.


Ingredients

  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup coconut sugar
  • 1/2 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 2 tbsp melted coconut oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, whisk together the whole wheat flour, baking powder, salt, and coconut sugar.
  3. In another bowl, combine the unsweetened applesauce, almond milk, vanilla extract, and melted coconut oil.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Avoid overmixing.
  5. Spoon the batter into mini muffin tins, filling each cup about two-thirds full.
  6. Bake for about 15-18 minutes, or until golden brown.
  7. Roll the warm churro bites in a mixture of cinnamon and sugar before serving.
  8. Allow to cool slightly on a wire rack before serving.
