Description

A hearty and healthy Healing Yellow Split Pea Soup packed with protein and fiber, perfect for busy weeknights.


Ingredients

Scale
  • 2 tablespoons coconut oil
  • 2 cups minced onions
  • 5 cloves minced garlic
  • 1 cup diced carrots
  • 2 cups split peas
  • 3 celery sticks (chopped)
  • 200 grams diced potatoes
  • 300 grams chorizo sausages (or any meat you prefer)
  • 2.5 liters water
  • 2 cups cashew milk (or any milk of your choice)
  • 3 stock cubes
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1 teaspoon turmeric
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • ½ teaspoon smoked paprika
  • 1 dried lemongrass stalk

Instructions

  1. Chop the vegetables and lightly rinse the split peas to remove any dust or impurities.
  2. Heat the coconut oil in a large pot over medium heat until melted.
  3. Sauté the onions for 2 minutes, allowing them to turn translucent and fragrant.
  4. Add the diced potatoes, carrots, and celery to the pot. Sauté for a further 3 minutes to soften the vegetables.
  5. Pour in the water, add 3 stock cubes, and the dried lemongrass stalk for great flavor.
  6. Toss in the split peas and stir well; bring to a gentle boil.
  7. Cook for 60 minutes, stirring occasionally, until the split peas are soft.
  8. Add the cut chorizo sausages, cashew milk, and all seasonings and spices, stirring to combine.
  9. Finally, cook for a further 20 minutes to allow the flavors to meld beautifully.

Notes

Serve with fresh herbs or a dollop of yogurt; pairs well with crusty bread or a side salad.
