A hearty and healthy Healing Yellow Split Pea Soup packed with protein and fiber, perfect for busy weeknights.
Ingredients

- 2 tablespoons coconut oil
- 2 cups minced onions
- 5 cloves minced garlic
- 1 cup diced carrots
- 2 cups split peas
- 3 celery sticks (chopped)
- 200 grams diced potatoes
- 300 grams chorizo sausages (or any meat you prefer)
- 2.5 liters water
- 2 cups cashew milk (or any milk of your choice)
- 3 stock cubes
- 2 teaspoons salt
- 1 teaspoon pepper
- 1 teaspoon turmeric
- 1 teaspoon oregano
- 1 teaspoon thyme
- ½ teaspoon smoked paprika
- 1 dried lemongrass stalk
Instructions
- Chop the vegetables and lightly rinse the split peas to remove any dust or impurities.
- Heat the coconut oil in a large pot over medium heat until melted.
- Sauté the onions for 2 minutes, allowing them to turn translucent and fragrant.
- Add the diced potatoes, carrots, and celery to the pot. Sauté for a further 3 minutes to soften the vegetables.
- Pour in the water, add 3 stock cubes, and the dried lemongrass stalk for great flavor.
- Toss in the split peas and stir well; bring to a gentle boil.
- Cook for 60 minutes, stirring occasionally, until the split peas are soft.
- Add the cut chorizo sausages, cashew milk, and all seasonings and spices, stirring to combine.
- Finally, cook for a further 20 minutes to allow the flavors to meld beautifully.
Notes
Serve with fresh herbs or a dollop of yogurt; pairs well with crusty bread or a side salad.
