Description

A hearty meatloaf combining ground turkey, carrots, and sweet potatoes, packed with flavor and nutrition.


Ingredients

Scale
  • 1 medium onion, finely diced
  • 1/4 teaspoon salt
  • 3 tablespoons olive oil
  • 1 kg ground turkey (about 2 lbs)
  • 1 medium carrot, grated (about 200 grams or 7 oz)
  • 1/2 medium sweet potato, grated (about 100 grams or 3.5 oz)
  • 3 cloves garlic, grated or finely diced
  • 1 teaspoon lemon zest
  • 1 teaspoon orange zest
  • 1 teaspoon cinnamon powder
  • 1 teaspoon ground coriander seed powder
  • 1 teaspoon paprika powder
  • 2 teaspoons salt
  • 1 teaspoon hot mustard
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon bicarb soda
  • 2 tablespoons lemon juice
  • 2 eggs
  • 1/4 cup nuts of choice, chopped (optional)
  • 1/4 cup raisins or sultanas, chopped (optional)
  • 1 teaspoon olive oil for greasing
  • 2 tablespoons flour or breadcrumbs
  • 1/2 cup mayonnaise
  • Slices of carrots and parsley for decoration
  • Seeds or chopped nuts for decoration
  • Thinly sliced lemon and/or orange rind for decoration
  • Ground black pepper for decoration

Instructions

  1. Preheat the oven to 170 C / 340 F (conventional).
  2. Sauté the onion in olive oil with 1/4 teaspoon of salt for about 5-6 minutes, until soft and golden.
  3. In a large bowl, combine grated carrots, sweet potatoes, pre-cooked onions, and the rest of the ingredients, mixing with your hands until well incorporated.
  4. Grease a round springform cake tin with olive oil and dust with flour or breadcrumbs.
  5. Transfer the meat and carrot mixture to the tin and spread evenly.
  6. Bake in the oven on the middle shelf for 1 hour.
  7. Check for doneness with a meat thermometer, it should read 75 C / 165 F.
  8. Allow to cool slightly, then carefully release and remove from the tin onto a plate.
  9. Spread mayonnaise over the top and decorate with carrots, parsley, seeds, lemon and orange zest, and black pepper.

Notes

For extra flavor, consider adding a splash of Worcestershire sauce to the mix. Letting the meatloaf rest after baking improves its texture.
