Description

A quick one-pan meal featuring browned beef, wilted spinach, and creamy feta, perfect for busy weeknight dinners.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef (80/20 for best browning)
  • 1 teaspoon dried oregano
  • 1 onion, chopped
  • Salt and pepper, to taste
  • 2 cups fresh spinach, chopped
  • 1 teaspoon paprika
  • 2 cloves garlic, minced
  • ½ cup feta cheese, crumbled
  • ¼ cup fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a skillet over medium heat, wait until it shimmers and the pan gives a faint sizzle.
  2. Cook onion and garlic for 3-4 minutes, until soft, stir until the onion becomes translucent and the garlic smells mellow.
  3. Add ground beef, break it up, and cook for 5-7 minutes until browned, stir and scrape the pan so you see small browned bits. Drain fat if needed, leaving a little for flavor.
  4. Stir in spinach, oregano, paprika, salt, and pepper, cook for 3-4 minutes until spinach wilts.
  5. Remove from heat and top with crumbled feta, letting the heat soften it into creamy pockets.
  6. Sprinkle with parsley and serve warm.

Notes

This dish works great for reheating and can be served over rice or crusty bread.
