- 1 tablespoon olive oil
- 1 pound ground beef (80/20 for best browning)
- 1 teaspoon dried oregano
- 1 onion, chopped
- Salt and pepper, to taste
- 2 cups fresh spinach, chopped
- 1 teaspoon paprika
- 2 cloves garlic, minced
- ½ cup feta cheese, crumbled
- ¼ cup fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a skillet over medium heat, wait until it shimmers and the pan gives a faint sizzle.
- Cook onion and garlic for 3-4 minutes, until soft, stir until the onion becomes translucent and the garlic smells mellow.
- Add ground beef, break it up, and cook for 5-7 minutes until browned, stir and scrape the pan so you see small browned bits. Drain fat if needed, leaving a little for flavor.
- Stir in spinach, oregano, paprika, salt, and pepper, cook for 3-4 minutes until spinach wilts.
- Remove from heat and top with crumbled feta, letting the heat soften it into creamy pockets.
- Sprinkle with parsley and serve warm.
Notes
This dish works great for reheating and can be served over rice or crusty bread.
