- 1 cup long-grain white rice
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced (fresh only)
- 1 can diced tomatoes (fire-roasted if available)
- 2 cups beef broth
- 1 teaspoon Italian herbs
- Salt and pepper to taste
- Olive oil
Instructions
- Heat olive oil in a large skillet over medium heat until it shimmers.
- Add onion, bell pepper, and garlic; sauté for about 5-7 minutes until softened.
- Add ground beef and cook until browned, breaking it up until no pink remains.
- Stir in the rice, diced tomatoes, beef broth, and Italian herbs until evenly distributed.
- Bring to a boil, then reduce heat and simmer for about 20 minutes until the rice is cooked.
- Season with salt and pepper to taste, then let rest off heat for 5 minutes before serving.
Notes
Use long-grain white rice for a fluffy texture. Measure rice and liquid carefully to keep the texture predictable.
