Description

A quick and nutritious Greek Yogurt Chicken Salad, perfect for busy weeknights. Creamy, tangy, and packed with protein and fresh ingredients.


Ingredients

  • 1 cup Greek yogurt
  • 2 cloves garlic, minced
  • 4 tablespoons lemon juice, freshly squeezed
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh dill or parsley
  • 3 cups cooked chicken, cut into small cubes
  • 3 scallions, thinly sliced
  • 1/4 cup red onion, chopped
  • 2 stalks of celery, sliced
  • 1/2 cup cubed apples
  • 1/2 cup red grapes, halved if large
  • 1/3 cup sliced almonds, preferably roasted
  • 1 small avocado, cubed (optional)
  • 1/2 cup thinly sliced cucumber (optional)
  • 1/4 cup thinly sliced radishes (optional)
  • 3 tablespoons chives (optional garnish)

Instructions

  1. In a bowl, whisk together Greek yogurt, minced garlic, lemon juice, olive oil, kosher salt, and black pepper until smooth.
  2. In a separate large bowl, combine cooked chicken, scallions, red onion, celery, apples, grapes, and almonds.
  3. If using optional ingredients, fold them in, then drizzle the dressing over the salad and gently toss until well coated.

For best flavor, let the salad sit in the fridge for a few minutes before serving.
