- 2 cloves garlic, minced
- 4 tablespoons lemon juice, freshly squeezed
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh dill or parsley
- 3 cups cooked chicken, cut into small cubes
- 3 scallions, thinly sliced
- 1/4 cup red onion, chopped
- 2 stalks of celery, sliced
- 1/2 cup cubed apples
- 1/2 cup red grapes, halved if large
- 1/3 cup sliced almonds, preferably roasted
- 1 small avocado, cubed (optional)
- 1/2 cup thinly sliced cucumber (optional)
- 1/4 cup thinly sliced radishes (optional)
- 3 tablespoons chives (optional garnish)
Instructions
- In a bowl, whisk together Greek yogurt, minced garlic, lemon juice, olive oil, kosher salt, and black pepper until smooth.
- In a separate large bowl, combine cooked chicken, scallions, red onion, celery, apples, grapes, and almonds.
- If using optional ingredients, fold them in, then drizzle the dressing over the salad and gently toss until well coated.

For best flavor, let the salad sit in the fridge for a few minutes before serving.
