Description

A quick and delicious Greek-inspired bowl featuring rotisserie chicken, fresh veggies, and a creamy tzatziki.


Ingredients

  • 7 ounces plain Greek yogurt
  • 2 tablespoons extra virgin olive oil
  • 1 cup finely diced Persian cucumbers
  • 1 tablespoon finely chopped fresh dill fronds
  • 3 garlic cloves, minced
  • 1/2 teaspoon distilled white vinegar
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 teaspoon kosher salt, plus more to taste
  • 1/2 teaspoon ground white pepper
  • 4 cups shredded rotisserie chicken
  • 2 tablespoons extra virgin olive oil (for sautéing)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 1 teaspoon garlic powder
  • 1/4 teaspoon ground cayenne red pepper (optional)
  • Kosher salt and freshly ground black pepper, to taste
  • 1 cup cooked brown rice
  • 1/2 cup sliced kalamata olives
  • 1 cup halved cherry tomatoes
  • 1/4 cup thinly sliced red onion
  • 2 cups thinly sliced romaine lettuce
  • 1/2 cup crumbled feta cheese

Instructions

  1. Prepare the tzatziki by mixing Greek yogurt, 2 tablespoons olive oil, cucumbers, dill, garlic, vinegar, lemon juice, salt, and white pepper in a bowl until well combined. Set aside.
  2. Heat olive oil in a skillet over medium heat, add the shredded chicken, cumin, paprika, garlic powder, cayenne (if using), salt, and pepper. Stir to coat and heat until warmed through, about 3-4 minutes.
  3. Divide cooked brown rice evenly into bowls.
  4. Top the rice with the warm chicken, distributing evenly.
  5. Add olives, tomatoes, red onions, and lettuce in layers.
  6. Finish with feta cheese and drape tzatziki over the bowls.

Notes

For best flavor, let the tzatziki sit in the fridge for a couple of hours before serving.
