- 2 pounds baby potatoes
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 teaspoons dried oregano
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and halve the baby potatoes.
- Mix together the olive oil, garlic, oregano, salt, and pepper in a separate bowl.
- Pour the oil mixture over the potatoes and toss to coat evenly.
- Spread the potatoes on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, or until golden brown and crispy.
- Remove from the oven and sprinkle the crumbled feta cheese on top.
- Return to the oven for an additional 5 minutes until the feta is slightly melted.
- Garnish with fresh parsley and serve.
Notes
For best results, use similar-sized potatoes to ensure even cooking and browning.
