- 2 pounds baby or Yukon Gold potatoes, halved
- 3 tablespoons olive oil, extra virgin
- 1 teaspoon kosher salt, adjust to taste
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon garlic powder or 3 cloves fresh garlic, minced
- 1/2 cup freshly grated Parmesan cheese, packed
- 1 tablespoon chopped fresh parsley, optional
- 1 teaspoon dried oregano or Italian seasoning, optional
- 1 tablespoon lemon zest, optional
- 1 tablespoon unsalted butter, cut into small pieces, optional
Instructions
- Preheat the oven to 425°F and line a large rimmed baking sheet with parchment paper.
- Toss the halved potatoes with olive oil, kosher salt, black pepper, garlic powder, and oregano until evenly coated.
- Spread the potatoes cut side down in a single layer on the prepared baking sheet.
- Roast for 25 minutes, check for browning, and flip any undercooked pieces.
- Roast an additional 10 to 15 minutes until golden and crispy.
- Remove from the oven, sprinkle Parmesan over the hot potatoes, and return to the oven for 2 to 3 minutes.
- Toss with butter pieces, lemon zest, and parsley if using, then adjust salt and pepper before serving.
Notes
For best results, do not crowd the pan to maximize crispiness. Freshly grated Parmesan is recommended for better melting.
