Instructions
- Prep the Potatoes and Garlic: Rinse and halve the baby potatoes; mince the garlic fine.
- Season the Chicken: Rub chicken breasts with olive oil; sprinkle with Italian seasoning, salt, black pepper, and red pepper flakes.
- Layer in the Crockpot: Place halved potatoes in the bottom of the crockpot; lay seasoned chicken on top.
- Pour the Broth: Pour chicken broth over the chicken and potatoes.
- Add Garlic and Cheese: Distribute garlic over the top; sprinkle parmesan cheese.
- Cook the Dish: Cover and set the crockpot to low for 6-7 hours, or high for 3-4 hours.
- Check for Doneness: Ensure chicken reaches 165°F and potatoes are fork-tender.
- Serve: Remove chicken and potatoes from the crockpot; drizzle sauce over them and garnish with parsley.
Notes
For added richness, consider using homemade chicken broth. A quick broil before serving can add a nice crunch.
