  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth

  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil

Instructions

  1. Prep the Potatoes and Garlic: Rinse and halve the baby potatoes; mince the garlic fine.
  2. Season the Chicken: Rub chicken breasts with olive oil; sprinkle with Italian seasoning, salt, black pepper, and red pepper flakes.
  3. Layer in the Crockpot: Place halved potatoes in the bottom of the crockpot; lay seasoned chicken on top.
  4. Pour the Broth: Pour chicken broth over the chicken and potatoes.
  5. Add Garlic and Cheese: Distribute garlic over the top; sprinkle parmesan cheese.
  6. Cook the Dish: Cover and set the crockpot to low for 6-7 hours, or high for 3-4 hours.
  7. Check for Doneness: Ensure chicken reaches 165°F and potatoes are fork-tender.
  8. Serve: Remove chicken and potatoes from the crockpot; drizzle sauce over them and garnish with parsley.
