  • 1.5 pounds beef stew meat (cut into bite-sized pieces)
  • 1 pound baby potatoes (halved)
  • 4 tablespoons unsalted butter (melted)
  • 3 cloves garlic (minced)
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup beef broth
  • 1 tablespoon olive oil

Instructions

  1. Gather all your ingredients. Cut the beef into bite-sized pieces and halve the baby potatoes.
  2. Optionally, parboil the baby potatoes for a few minutes to soften.
  3. Heat olive oil in a skillet and sear the beef bites until browned on all sides.
  4. In a bowl, combine melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper to make the garlic butter sauce.
  5. In the slow cooker, place halved baby potatoes and seared beef, then pour over the garlic butter sauce and add beef broth.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours until beef is fork-tender.
  7. Let the dish rest for about 10 minutes before serving.
