Ingredients

  • 1.5 pounds Beef stew meat (cut into bite-sized pieces)
  • 1 pound Baby potatoes (halved)
  • 4 tablespoons Unsalted butter (melted)
  • 3 cloves Garlic (minced)
  • 1 teaspoon Onion powder
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Dried thyme
  • 0.5 teaspoon Dried rosemary
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Beef broth
  • 1 tablespoon Olive oil

Instructions

  1. Gather all ingredients and cut the beef into bite-sized pieces. Halve the baby potatoes.
  2. Optional: Parboil the baby potatoes for a few minutes to soften them.
  3. Heat olive oil in a skillet over medium-high heat and sear the beef bites until browned, about 5-7 minutes.
  4. In a bowl, mix melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper to create the garlic butter sauce.
  5. In a slow cooker, add halved baby potatoes and the seared beef. Pour the garlic butter sauce and beef broth over everything.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours until the beef is tender.
  7. Let rest for 10 minutes before serving.
