Description

A vibrant and crunchy salad filled with vitamin-rich carrots and dressed with a zesty lemon Dijon vinaigrette.


Ingredients

  • 1 pound carrots, peeled
  • 2 teaspoons Dijon mustard
  • 1 tablespoon freshly squeezed lemon juice
  • 1.5 tablespoons vegetable oil
  • 1.5 tablespoons extra virgin olive oil
  • 1 to 2 teaspoons honey, to taste
  • 0.25 teaspoon salt
  • 0.25 teaspoon freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley
  • 2 finely sliced scallions or 1 tablespoon finely chopped shallots

Instructions

  1. Shred the carrots in a food processor; set aside.
  2. In a salad bowl, combine the Dijon mustard, lemon juice, honey, vegetable oil, olive oil, salt, and pepper; whisk together until well blended.
  3. Add the shredded carrots, fresh parsley, and scallions or shallots, then toss well to combine.
  4. Taste and adjust the seasoning if necessary, adding more honey, salt, or pepper based on preference.
  5. Cover and refrigerate until ready to serve.

Notes

For best flavor, let the salad sit in the refrigerator for at least 30 minutes before serving.
