- 1 sheet puff pastry
- 2 cups fresh spinach
- 1/2 cup cream cheese
- 2 large eggs
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Olive oil for sautéing

Instructions
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry on a lightly floured surface to about 1/8 inch thick and cut it into circles.
- Place the pastry circles on a baking sheet and bake for 12-15 minutes until golden and flaky.
- In a skillet, heat olive oil and sauté fresh spinach until wilted.
- Mix in cream cheese with the wilted spinach until smooth.
- Whisk together eggs, salt, and pepper in a separate bowl.
- Fill cooled pastry shells with the spinach mixture, then pour the egg mixture on top.
- Sprinkle grated Parmesan cheese over each pastry.
- Return to the oven for 15-18 minutes or until eggs are set and tops are golden.
- Garnish with fresh herbs and serve warm.
Notes
For extra flavor, consider using garlic or sautéing some onions with the spinach. Chill the pastry for 15 minutes before baking for extra flakiness.
