Description

Warm, savory, and super easy to whip up, this Egg Roll in a Bowl recipe brings all the delicious flavors of traditional egg rolls without the hassle of frying.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground turkey
  • 1 small sweet onion, finely diced
  • 1 cup shredded carrots
  • 3 garlic cloves, finely minced
  • 1 teaspoon finely minced fresh ginger
  • ¼ cup chicken broth
  • 1 small head cabbage, shredded (about 8 cups)
  • 3 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon toasted sesame oil
  • Cooked white rice (optional)
  • Green onions, thinly sliced (green parts only)
  • Toasted sesame seeds
  • Sriracha Mayo (optional)

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the ground turkey and cook until it’s almost done, about 5 to 6 minutes.
  3. Push the turkey to one side of the skillet. Add the onion and the remaining tablespoon of olive oil, and sauté for 3 to 4 minutes until the onion becomes translucent.
  4. Stir in the carrots, garlic, and ginger, cooking for another 2 minutes while stirring.
  5. Pour in the chicken broth, scraping up any browned bits from the pan.
  6. Add the shredded cabbage, soy sauce, rice vinegar, salt, and black pepper. Stir well, then cover the skillet.
  7. Reduce the heat to medium-low and let it cook for 12 to 15 minutes until the cabbage is tender.
  8. Remove from heat and drizzle the toasted sesame oil over the dish.
  9. Serve over white rice if desired, and top with green onions, sesame seeds, and a drizzle of sriracha mayo.
