- 4–6 boneless, skinless chicken thighs or breasts (about 1.5–2 pounds total)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon olive oil or unsalted butter
- 1 medium yellow onion, finely chopped
- 2 cloves garlic, minced
- ½ cup chicken broth
- ½ cup heavy cream
- 1 tablespoon all-purpose flour (optional, for thicker sauce)
- Fresh parsley, chopped, for garnish (optional)
Instructions
- 1. Pat the chicken dry and season with salt and pepper.
- 2. Heat oil/butter in a skillet over medium-high heat and sear chicken until golden brown on both sides. Remove chicken and set aside.
- 3. Reduce heat to medium, add chopped onion to the skillet. Cook until softened and translucent, about 5-7 minutes.
- 4. Add minced garlic and cook for 1 minute until fragrant.
- 5. (Optional) Sprinkle flour over onions and garlic; stir and cook for 1 minute.
- 6. Pour in chicken broth, scraping up browned bits. Simmer for 2-3 minutes until slightly reduced.
- 7. Stir in heavy cream. Simmer gently for about 5 minutes until sauce thickens.
- 8. Return chicken to the skillet, nestling it into the sauce. Cover and simmer on low heat for 15-20 minutes, or until chicken is cooked through and tender.
- 9. Garnish with fresh parsley, if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop over low heat, adding a splash of liquid if needed, or in the microwave on a lower power setting, stirring halfway through.
