Ingredients

- 1 can of salmon, drained
- 1 cup of breadcrumbs
- 1/4 cup of chopped onion
- 1/4 cup of chopped bell pepper
- 2 eggs, beaten
- 1 tablespoon of Dijon mustard
- Salt and pepper to taste
- Oil for frying
Instructions
- In a large bowl, combine the drained salmon, breadcrumbs, onion, bell pepper, beaten eggs, Dijon mustard, salt, and pepper. Mix with hands for better texture.
- Shape the mixture into patties about 2-3 inches in diameter.
- Heat oil in a skillet over medium heat.
- Fry each patty for 4-5 minutes on each side until golden brown.
- Serve warm with sauce or over a fresh salad.
Notes
For an extra crispy finish, consider adding a tablespoon of flour to your mixture. Store cooked patties in an airtight container for up to 3 days in the fridge.
