Ingredients

- 2 (15-ounce) cans chickpeas, drained and rinsed
- 1 large cucumber, diced
- 1 red bell pepper, diced
- 2 cups cherry tomatoes, halved
- 1/4 cup red onion, diced
- 4 ounces feta cheese, crumbled
- 1/4 cup finely chopped parsley
- Lemon vinaigrette, to taste
Instructions
- Add all of the ingredients into a large mixing bowl.
- Pour the lemon vinaigrette over the salad and stir gently until well combined.
Notes
For added flavor, roast the chickpeas before mixing, and let the salad sit for at least 30 minutes to meld flavors. Store in an airtight container for up to 4 days.
