- 1 pound ground beef (80/20 blend)
- 1 medium head green cabbage (about 2 pounds), cored and chopped
- 1 large yellow onion, diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil or avocado oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons tomato paste
- 1/2 cup beef broth or water
- 2 tablespoons soy sauce or coconut aminos
- 1 tablespoon apple cider vinegar
- 2 green onions, chopped (for garnish)
Instructions
- 1. Heat 1 tablespoon oil in a large skillet over medium-high heat. Brown ground beef, breaking it up, for 6-8 minutes. Remove and set aside.
- 2. Add remaining oil if needed. Cook diced onion until softened, about 4-5 minutes.
- 3. Add garlic and cook 30 seconds. Stir in tomato paste and cook 1-2 minutes.
- 4. Add chopped cabbage in batches, stirring to combine with onion mixture.
- 5. Season with salt, pepper, paprika, oregano, and red pepper flakes.
- 6. Pour in beef broth and soy sauce, return beef to pan.
- 7. Cover and simmer on medium-low for 10-12 minutes until cabbage is tender.
- 8. Remove lid, increase heat to cook off excess liquid, 2-3 minutes.
- 9. Stir in apple cider vinegar and garnish with green onions.
Notes
Store leftovers in refrigerator for up to 4 days. Can substitute coconut aminos for soy sauce to make Whole30 compliant.
