Ingredients

- 2 cups cooked rice
- 2 cups broccoli florets
- 1 lb boneless, skinless chicken breasts
- 1 can (10.5 oz) cream of chicken soup
- 1 cup shredded cheddar cheese
- 1 cup chicken broth
- Salt and pepper to taste
Instructions
- Place the chicken breasts at the bottom of the crockpot.
- In a mixing bowl, combine the cream of chicken soup with the chicken broth and stir until smooth; pour this mixture over the chicken.
- Layer the cooked rice and fresh broccoli florets on top; season with salt and pepper.
- Cover and cook on low for 4-6 hours or until the chicken is tender. Cook on high for 2-3 hours if short on time.
- Stir in shredded cheddar cheese just before serving and allow it to melt before serving.
Notes
To store, cool completely and transfer to an airtight container. It can be refrigerated for up to 4 days or frozen for up to 2 months.
