Description

A vibrant pasta dish featuring cherry tomatoes bursting with flavor and creamy burrata, ready in just 30 minutes.


Ingredients

Scale
  • 1/4 cup olive oil
  • 6 garlic cloves, minced
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon crushed red pepper flakes, plus more for sprinkling
  • 3 cups cherry or grape tomatoes
  • Kosher salt and pepper
  • 1/2 pound pasta, like spaghetti or bucatini
  • 1/4 cup chopped fresh basil, plus more for sprinkling
  • 8 ounces burrata cheese
  • Parmesan cheese, for topping

Instructions

  1. Heat the olive oil in a large skillet over medium-low heat.
  2. Add in the garlic, dried basil, and red pepper flakes, cooking for 1 to 2 minutes until fragrant.
  3. Toss in the tomatoes with a big pinch of salt and pepper, mixing them well with the oil.
  4. Allow the tomatoes to cook for 20 to 25 minutes, stirring occasionally, until they begin to burst.
  5. Meanwhile, in a separate pot, bring salted water to a boil and cook the pasta according to package directions until al dente.
  6. Once the pasta is done, drain it and add it directly to the skillet with the tomatoes, tossing everything to coat the noodles.
  7. Turn off the heat and fold in the fresh basil.
  8. Gently add in the burrata cheese as desired, breaking it up a bit with the spatula for creamy distribution.
  9. Taste and adjust the seasoning with more salt and pepper if needed.
  10. Serve immediately, topped with freshly grated parmesan, more fresh basil, and a sprinkle of red pepper flakes.

Notes

For best results, do not rush the cooking of the garlic and let the tomatoes burst for enhanced flavor.
