- 1/4 cup olive oil
- 6 garlic cloves, minced
- 1/2 teaspoon dried basil
- 1/4 teaspoon crushed red pepper flakes, plus more for sprinkling
- 3 cups cherry or grape tomatoes
- Kosher salt and pepper
- 1/2 pound pasta, like spaghetti or bucatini
- 1/4 cup chopped fresh basil, plus more for sprinkling
- 8 ounces burrata cheese
- Parmesan cheese, for topping
Instructions
- Heat the olive oil in a large skillet over medium-low heat.
- Add in the garlic, dried basil, and red pepper flakes, cooking for 1 to 2 minutes until fragrant.
- Toss in the tomatoes with a big pinch of salt and pepper, mixing them well with the oil.
- Allow the tomatoes to cook for 20 to 25 minutes, stirring occasionally, until they begin to burst.
- Meanwhile, in a separate pot, bring salted water to a boil and cook the pasta according to package directions until al dente.
- Once the pasta is done, drain it and add it directly to the skillet with the tomatoes, tossing everything to coat the noodles.
- Turn off the heat and fold in the fresh basil.
- Gently add in the burrata cheese as desired, breaking it up a bit with the spatula for creamy distribution.
- Taste and adjust the seasoning with more salt and pepper if needed.
- Serve immediately, topped with freshly grated parmesan, more fresh basil, and a sprinkle of red pepper flakes.
Notes
For best results, do not rush the cooking of the garlic and let the tomatoes burst for enhanced flavor.
