  • 4 boneless, skinless chicken breasts (about 68 ounces each)
  • 1 cup whole milk ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. 1. Preheat oven to 400°F (200°C). Lightly grease a 9×13 inch baking dish with 1 tablespoon of olive oil.
  2. 2. In a medium bowl, whisk together ricotta cheese, Parmesan cheese, egg, minced garlic, parsley, Italian seasoning, salt, and pepper until well combined.
  3. 3. Pat chicken breasts dry. Place in the prepared baking dish. Drizzle with remaining 1 tablespoon olive oil and season lightly with salt and pepper.
