A slow-cooked side of halved baby potatoes tossed in olive oil, garlic powder, and thyme, finished with grated Parmesan for a tender, flavorful coating.

- 2 pounds baby potatoes
- 1 cup grated Parmesan cheese
- 1/4 cup olive oil
- 2 teaspoons garlic powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Wash and halve the baby potatoes.
- Combine olive oil, garlic powder, thyme, salt, and pepper in a mixing bowl.
- Toss potatoes in the mixture until evenly coated.
- Transfer to the crockpot and sprinkle Parmesan cheese on top.
- Cook on low for 360-480 minutes or high for 180-240 minutes until tender.
- Garnish with fresh parsley before serving.
Notes
For best flavor, press the seasoning into the cut sides of the potatoes.
