Description

A comforting, hearty soup that’s easy to prepare and perfect for busy weeknights.


Ingredients

Scale
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 3 cups potatoes, diced
  • 1 cup carrots, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cheddar cheese, shredded
  • 1/2 cup heavy cream
  • Optional toppings: croutons, diced pickles, and chopped green onions

Instructions

  1. Brown the ground beef in a skillet over medium heat until just brown and no longer pink. Drain the excess fat.
  2. In the crockpot, combine the cooked beef, chopped onion, minced garlic, beef broth, diced potatoes, carrots, oregano, salt, and pepper. Stir to mix well.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the vegetables are tender.
  4. In the last 30 minutes, stir in the shredded cheddar cheese and heavy cream until melted.
  5. Serve hot, garnished with croutons, diced pickles, or chopped green onions.

Notes

For a vegetarian version, substitute ground beef with lentils or mushrooms and use vegetable broth.
