Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 3 cups potatoes, diced
- 1 cup carrots, diced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cheddar cheese, shredded
- 1/2 cup heavy cream
- Optional toppings: croutons, diced pickles, and chopped green onions
Instructions
- Brown the ground beef in a skillet over medium heat until just brown and no longer pink. Drain the excess fat.
- In the crockpot, combine the cooked beef, chopped onion, minced garlic, beef broth, diced potatoes, carrots, oregano, salt, and pepper. Stir to mix well.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the vegetables are tender.
- In the last 30 minutes, stir in the shredded cheddar cheese and heavy cream until melted.
- Serve hot, garnished with croutons, diced pickles, or chopped green onions.
Notes
For a vegetarian version, substitute ground beef with lentils or mushrooms and use vegetable broth.
