Description

These crispy Parmesan roasted potatoes bake with golden, cheesy edges while the centers remain soft and fluffy. A perfect side dish for weeknight dinners.


Ingredients

  • 1 pound baby potatoes
  • 1/4 cup grated Parmesan cheese
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried herbs, like rosemary or thyme

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash the baby potatoes and cut them in half.
  3. In a large bowl, toss the potatoes with olive oil, garlic, salt, pepper, and dried herbs until well coated.
  4. Spread the potatoes in a single layer on a baking sheet.
  5. Sprinkle the grated Parmesan cheese over the top.
  6. Bake for 25-30 minutes, or until golden and crispy, flipping halfway through.
  7. Remove from the oven and serve warm.

Notes

Refrigerate leftovers in an airtight container for up to 3-4 days; re-crisp in the oven at 400°F for 8-10 minutes. Do not freeze after roasting.
