Description

Crispy on the outside and fluffy on the inside, these oven-roasted baby potatoes are a quick and reliable side dish for any meal.


Ingredients

  • 1.5 pounds baby potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley, optional

Instructions

  1. Preheat your oven to 425°F (220°C). Wash and dry the baby potatoes thoroughly. Cut any larger potatoes in half so they roast evenly.
  2. In a large mixing bowl, combine the potatoes with olive oil, garlic powder, paprika, salt, and black pepper. Toss well to coat all the potatoes evenly.
  3. Line a baking sheet with parchment paper or foil. Spread the seasoned potatoes in a single layer, ensuring they are not crowded.
  4. Roast for 30–35 minutes, flipping halfway through, until the potatoes are golden brown and crispy on the edges.
  5. Remove from the oven and sprinkle with fresh chopped parsley if desired. Serve immediately.

Notes

For best results, do not crowd the baking sheet to avoid steaming. Toss with a little extra olive oil before reheating to encourage browning.
