Description

Delightful breakfast dish combining crispy feta cheese and perfectly cooked eggs on a tortilla or toast.


Ingredients

  • 1 large egg
  • ¾ oz / 20g feta cheese (crumbled)
  • 1 small tortilla or slice of toasted bread
  • ¼ avocado (sliced or smashed)
  • Dried oregano (to taste)
  • Red pepper flakes (a pinch)
  • Cooking oil spray or olive oil spray (for frying)
  • Lemon juice (for brightness)
  • Pickled onions (for garnish)
  • Chili oil (for garnish)

Instructions

  1. In a small fry pan or skillet, add a spray of cooking oil and crumble the feta cheese in, ensuring it covers the pan’s circle.
  2. Allow the feta cheese to sizzle and sauté over medium heat until a golden crust forms.
  3. Gently crack the egg in the center of the pan, taking care not to overcook it for a runny yolk.
  4. Season the egg with dried oregano and red pepper flakes; cook to your liking.
  5. Warm the tortilla on a stove, oven, or microwave. Smash or slice the avocado and squeeze lemon juice on it.
  6. Once the egg is cooked and the cheese is crispy, remove from the pan and place it on the tortilla.
  7. Garnish with pickled onions and a drizzle of chili oil. Serve hot and enjoy!

Notes

Best served fresh. For storing, let cool, then place in an airtight container. Refrigerate for up to 2 days.
