- ¾ oz / 20g feta cheese (crumbled)
- 1 small tortilla or slice of toasted bread
- ¼ avocado (sliced or smashed)
- Dried oregano (to taste)
- Red pepper flakes (a pinch)
- Cooking oil spray or olive oil spray (for frying)
- Lemon juice (for brightness)
- Pickled onions (for garnish)
- Chili oil (for garnish)
Instructions
- In a small fry pan or skillet, add a spray of cooking oil and crumble the feta cheese in, ensuring it covers the pan’s circle.
- Allow the feta cheese to sizzle and sauté over medium heat until a golden crust forms.
- Gently crack the egg in the center of the pan, taking care not to overcook it for a runny yolk.
- Season the egg with dried oregano and red pepper flakes; cook to your liking.
- Warm the tortilla on a stove, oven, or microwave. Smash or slice the avocado and squeeze lemon juice on it.
- Once the egg is cooked and the cheese is crispy, remove from the pan and place it on the tortilla.
- Garnish with pickled onions and a drizzle of chili oil. Serve hot and enjoy!

Best served fresh. For storing, let cool, then place in an airtight container. Refrigerate for up to 2 days.
