Description

Crispy herb-roasted potatoes with garlic and sea salt, perfect as a side dish for any meal.


Ingredients

  • 2 pounds baby potatoes, halved or quartered if large
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons fresh rosemary, chopped
  • 2 teaspoons fresh thyme leaves
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt, plus more for finishing
  • 1/2 teaspoon black pepper
  • Fresh parsley, chopped for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the halved or quartered potatoes with the olive oil, minced garlic, rosemary, thyme, onion powder, smoked paprika, sea salt, and black pepper, mix well.
  3. Spread the potatoes in a single layer on a large rimmed baking sheet.
  4. Roast in the preheated oven for about 25 to 30 minutes, flipping halfway for even browning.
  5. Check for doneness; if needed, roast for an additional 5 to 10 minutes.
  6. Remove from the oven and sprinkle with additional sea salt to taste.
  7. Garnish with chopped parsley if using, then serve hot.
