Description

Deliciously crispy tacos filled with spiced black beans – a healthy, high-fiber, and protein-rich meal.


Ingredients

  • 1 can black beans, rinsed and drained
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt to taste
  • Corn tortillas
  • Toppings: avocado, salsa, lettuce, cilantro (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). For crispiest tortillas, place a rack in the top third of the oven.
  2. Mash the black beans in a bowl and mix in cumin, chili powder, and salt. Leave a few whole beans for texture.
  3. Warm the corn tortillas slightly to make them pliable.
  4. Spoon black bean mixture onto each tortilla and fold them in half, using 2–3 tablespoons of filling per tortilla.
  5. For baking: Place filled tortillas on a baking sheet and bake for 10-15 minutes until crispy. For pan frying: Cook each side in a pan with a little water until crispy. For air frying: Place in the air fryer for 8-10 minutes until crispy.
  6. Serve with your choice of toppings.

Notes

Use day-old corn tortillas for better crispness. Brush the outside with light oil for browning.
