  • ¾ tsp smoked paprika
  • 2 eggs
  • ¼ tsp salt
  • ¾ cup panko crumbs
  • ¼ cup breadcrumbs
  • 1 tsp dried parsley
  • ½ tsp ground black pepper
  • ½ tsp sea salt
  • ½ tsp dried oregano
  • 1 tsp garlic powder
  • ¼ cup Parmesan cheese (freshly grated)
  • 2 romaine hearts (chopped)
  • 12 French baguettes
  • Additional Parmesan cheese (freshly grated)

Instructions

  1. Make the Dressing: In a bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce, lemon juice, grated Parmesan, minced garlic, black pepper, and sea salt until smooth. Reserve a portion to mix with the chopped romaine lettuce. Refrigerate both separately for enhanced flavors.
  2. Prepare the Chicken: Pound chicken cutlets to an even thickness and season them with sea salt and ground black pepper.
  3. Set Up Breading Station: Create a breading station with three plates: one with flour mixed with a pinch of salt, another with a simple egg mixture, and a third with panko crumbs combined with seasonings and grated Parmesan.
  4. Heat the Oil: In a frying pan, heat the oil over medium heat until hot but not smoking.
  5. Bread the Chicken: Dredge each chicken cutlet in the flour, dip it in the egg mixture, and finally coat it in the breadcrumb mixture until fully covered.
  6. Fry the Chicken: Fry the breaded chicken until golden brown on both sides, about 4-5 minutes per side. Drain on a wire rack to keep it crispy.
  7. Assemble the Sandwich: Slice open your baguettes. Spread the prepared dressing inside, add the crispy chicken, and top with the Caesar salad made from romaine dressed with the reserved dressing. Sprinkle with more Parmesan, close the sandwich, and serve immediately.
