Description

Oven-baked black bean tacos filled with cheese and spices, creating a crispy and satisfying meal.


Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup corn tortillas, slightly warm
  • 1 cup pepper jack cheese, shredded
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Olive oil for brushing

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mash the black beans in a mixing bowl and combine with cumin, chili powder, salt, and pepper.
  3. Take a corn tortilla and fill it with the black bean mixture and a handful of shredded pepper jack cheese.
  4. Fold the tortilla over to create a taco shape and press the seam lightly.
  5. Place the tacos on a sheet pan and brush them lightly with olive oil.
  6. Bake in the oven for about 15-20 minutes or until crispy and golden brown.
