Description

Golden, crispy Parmesan-crusted cod fillets made in the air fryer with a tender, flaky interior and crunchy exterior.


Ingredients

Scale
  • 4 cod fillets (6 ounces each), skin removed
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 3/4 cup freshly grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil spray
  • 1 lemon, cut into wedges

Instructions

  1. 1. Pat cod fillets dry and season with salt and pepper. Let sit 10 minutes at room temperature.
  2. 2. Set up three stations: flour in first dish, beaten eggs in second, and panko mixed with Parmesan, garlic powder, herbs, paprika, salt and pepper in third.
  3. 3. Preheat air fryer to 400°F for 3 minutes.
  4. 4. Dredge each fillet in flour, then egg, then breadcrumb mixture, pressing gently to adhere.
  5. 5. Spray air fryer basket with oil. Place fillets in single layer without overlapping.
  6. 6. Spray tops of fillets with oil spray.
  7. 7. Cook 10-12 minutes, flipping halfway through, until golden brown and internal temperature reaches 145°F.
  8. 8. Rest 2-3 minutes before serving with lemon wedges.

Notes

Store leftovers in refrigerator up to 2 days. Reheat in air fryer at 350°F for 3-4 minutes to restore crispiness.
