Description
Golden, crispy Parmesan-crusted cod fillets made in the air fryer with a tender, flaky interior and crunchy exterior.

- 4 cod fillets (6 ounces each), skin removed
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 3/4 cup freshly grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian herbs
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil spray
- 1 lemon, cut into wedges
Instructions
- 1. Pat cod fillets dry and season with salt and pepper. Let sit 10 minutes at room temperature.
- 2. Set up three stations: flour in first dish, beaten eggs in second, and panko mixed with Parmesan, garlic powder, herbs, paprika, salt and pepper in third.
- 3. Preheat air fryer to 400°F for 3 minutes.
- 4. Dredge each fillet in flour, then egg, then breadcrumb mixture, pressing gently to adhere.
- 5. Spray air fryer basket with oil. Place fillets in single layer without overlapping.
- 6. Spray tops of fillets with oil spray.
- 7. Cook 10-12 minutes, flipping halfway through, until golden brown and internal temperature reaches 145°F.
- 8. Rest 2-3 minutes before serving with lemon wedges.
Notes
Store leftovers in refrigerator up to 2 days. Reheat in air fryer at 350°F for 3-4 minutes to restore crispiness.
