Description

A hearty and healthy Indian green lentil stew packed with protein and flavor, ideal for family meals.


Ingredients

  • 1 cup green lentils
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tomatoes, chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 4 cups vegetable broth or water
  • Salt to taste
  • 2 tablespoons coconut milk (optional)
  • Fresh cilantro for garnish

Instructions

  1. Rinse the green lentils under cold water and drain.
  2. In a large pot, heat a little oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  3. Add chopped onions, garlic, and ginger, and sauté until the onions are translucent.
  4. Stir in the chopped tomatoes, turmeric powder, and salt, cooking until the tomatoes soften.
  5. Add the rinsed lentils and vegetable broth, bringing the mixture to a boil.
  6. Reduce the heat, cover the pot, and let it simmer for about 25-30 minutes, or until the lentils are tender.
  7. Stir in garam masala and coconut milk if using, adjusting seasoning to taste.
  8. Serve hot, garnished with fresh cilantro.

Notes

A squeeze of lemon at the table wakes up the dish. Can be served with rice or bread.
