Instructions
- Cook the gnocchi according to package instructions, stirring occasionally to prevent sticking.
- In a large skillet, heat olive oil over medium heat and add minced garlic, sautéing until fragrant (about 1 minute).
- Add fresh spinach to the skillet and cook until wilted (2-3 minutes).
- Stir in heavy cream and bring to a simmer.
- Add the cooked gnocchi and crumbled feta cheese, stirring gently to combine.
- Season with salt and pepper to taste.
- Serve topped with grated Parmesan cheese if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to a month. Reheat in a skillet and add a splash of milk to restore creaminess.
