Ingredients

  • 2 cups fresh spinach, packed
  • 1 cup feta cheese, crumbled
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Cook the gnocchi according to package instructions, stirring occasionally to prevent sticking.
  2. In a large skillet, heat olive oil over medium heat and add minced garlic, sautéing until fragrant (about 1 minute).
  3. Add fresh spinach to the skillet and cook until wilted (2-3 minutes).
  4. Stir in heavy cream and bring to a simmer.
  5. Add the cooked gnocchi and crumbled feta cheese, stirring gently to combine.
  6. Season with salt and pepper to taste.
  7. Serve topped with grated Parmesan cheese if desired.

Notes
