- 8 ounces white chocolate
- 1/2 cup dried cranberries, chopped
- 1/2 cup pistachios, chopped
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Melt the white chocolate in a heatproof bowl over simmering water or in the microwave. Stir until smooth and let it cool slightly.
- In a separate bowl, combine the heavy cream, vanilla extract, and salt. Blend until well combined.
- Fold the melted chocolate into the cream mixture gently.
- Fold in the chopped cranberries and pistachios until evenly distributed.
- Chill the mixture in the refrigerator for about 30 minutes until firm enough to shape.
- Form small balls about the size of cherries and roll each truffle in the chopped pistachios to coat.
- Place the truffles on a parchment-lined tray and chill again for another 30 minutes.
- Serve as a festive treat or package them for a gift.
