- 2 cups white beans (canned or cooked)
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Olive oil
- Fresh spinach (optional)
- Gluten-free bread for serving
Instructions
- In a large pot, heat olive oil over medium heat. Add the onion, garlic, carrots, and celery, and sauté until softened, about 6 to 8 minutes.
- Stir in the thyme and rosemary, cooking for another minute.
- Add the white beans, vegetable broth, and diced tomatoes. Bring to a boil, then reduce to a simmer.
- Cook for about 20-25 minutes, stirring occasionally. If using, add fresh spinach just before serving.
- Season with salt and pepper to taste. Serve hot with gluten-free bread for dipping.
Notes
For a creamier texture, mash a cup of beans against the pot side and stir back in. Adjust seasoning as needed.
