- 2 cups orzo pasta
- 1 tablespoon olive oil
- 1 pound chicken sausage (sliced)
- 2 cups broccoli florets
- 3 cloves garlic (minced)
- 4 cups chicken broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley (chopped)
Instructions
- Heat olive oil in a large pot over medium heat. Add sliced chicken sausage and cook for 5 to 7 minutes until browned.
- Toss in minced garlic and stir for about a minute until fragrant.
- Add broccoli florets and cook for 2 to 3 minutes until slightly softened.
- Stir in orzo, chicken broth, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat, cover, and simmer for 10 to 12 minutes.
- Once the orzo is tender, remove from heat and stir in Parmesan cheese until melted.
- Garnish with fresh parsley and serve hot.
Notes
For a creamier orzo, stir in a splash of cream with the Parmesan. This dish can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to a month.
