Description

A nutritious and flavorful toast topped with creamy cottage cheese, zucchini, spinach, and cherry tomatoes, perfect for a quick meal.


Ingredients

  • 2 slices of bread (whole grain, sourdough, or your choice)
  • 1/2 cup tomato sauce
  • 1/4 cup zucchini, shredded
  • 1/4 cup spinach, chopped
  • 1/2 cup cottage cheese
  • 1/4 cup cherry tomatoes, halved
  • Fresh basil for garnish

Instructions

  1. In a small bowl, mix together the tomato sauce and shredded zucchini until well combined.
  2. Spread the tomato and zucchini mixture evenly onto both slices of your selected bread.
  3. Top each slice with a handful of fresh spinach.
  4. Spread 1/4 cup of cottage cheese onto each slice.
  5. Finish with halved cherry tomatoes, distributing them evenly.
  6. Air fry at 390°F for about 8 minutes, checking halfway.
  7. Garnish with fresh basil and serve hot.

Notes

For added crunch, consider adding seeds or nuts on top before cooking. Store leftovers in the fridge for up to 2 days.
