- 1/2 cup tomato sauce
- 1/4 cup zucchini, shredded
- 1/4 cup spinach, chopped
- 1/2 cup cottage cheese
- 1/4 cup cherry tomatoes, halved
- Fresh basil for garnish
Instructions
- In a small bowl, mix together the tomato sauce and shredded zucchini until well combined.
- Spread the tomato and zucchini mixture evenly onto both slices of your selected bread.
- Top each slice with a handful of fresh spinach.
- Spread 1/4 cup of cottage cheese onto each slice.
- Finish with halved cherry tomatoes, distributing them evenly.
- Air fry at 390°F for about 8 minutes, checking halfway.
- Garnish with fresh basil and serve hot.
Notes
For added crunch, consider adding seeds or nuts on top before cooking. Store leftovers in the fridge for up to 2 days.
