Ingredients

- 1 cup lentils
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 4 cups vegetable broth
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh herbs for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery. Cook until tender, about 5-7 minutes.
- Stir in the garlic, cumin, and paprika, cooking for another minute until fragrant.
- Add the lentils, vegetable broth, and bay leaf. Bring to a boil, then reduce heat and let simmer for about 30-40 minutes, or until lentils are tender.
- Remove the bay leaf, and season with salt and pepper to taste.
- Serve hot, garnished with fresh herbs if desired.
Notes
Add a squeeze of lemon or a drizzle of olive oil right before serving for added brightness.
