- 1/4 cup unsalted butter, cold and cut into small pieces
- 1 teaspoon ground cinnamon
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it.
- In a large bowl, mix together the flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, whisk together the melted butter, milk, eggs, and vanilla until well combined.
- Gradually combine the wet ingredients with the dry ingredients, mixing gently to avoid overmixing.
- In a small bowl, prepare the streusel topping by whisking together the flour, brown sugar, and cinnamon, then cutting in the cold butter until the mixture is crumbly.
- Fill the muffin tins with batter, then sprinkle the streusel topping generously over each muffin.
- Bake in the preheated oven for 18 to 22 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool for 5 minutes in the pan before transferring to a wire rack to cool completely.
