- 1 cup coconut milk
- 1 cup chicken broth
- 1 cup jasmine rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated

Instructions
- Heat a splash of oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, cooking for 5 to 7 minutes per side until golden brown. Remove and let rest.
- In the same skillet, add chopped onion, minced garlic, and grated ginger. Sauté until onion is translucent, about 3 to 5 minutes.
- Add jasmine rice to the onion mixture, stirring to coat each grain.
- Pour in coconut milk and chicken broth, bringing to a gentle simmer. Reduce heat to low, cover, and simmer for 15 minutes until rice is tender and liquid is absorbed.
- Slice rested chicken and serve it over coconut rice, garnished with fresh cilantro.
Notes
For optimal flavor, sear the chicken in a hot skillet. Fluff rice with a fork before serving. Add brown sugar for sweetness and consider using vegetable broth for a lighter version.
