Description

Ingredients

  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • For the Filling:
  • ½ cup brown sugar, packed
  • 2 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, salt, and cinnamon.
  3. In another bowl, cream the softened butter with both granulated and brown sugars until fluffy.
  4. Beat in the egg and vanilla extract until smooth.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. For the filling, combine the packed brown sugar and ground cinnamon in a small bowl.
  7. Spread half of the dough on parchment paper, sprinkle with the filling mixture, and roll it up tightly.
  8. Slice into 1-inch rounds and place them on a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes until the edges are golden brown.
  10. Let them cool on a wire rack.
