Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking powder, salt, and cinnamon.
- In another bowl, cream the softened butter with both granulated and brown sugars until fluffy.
- Beat in the egg and vanilla extract until smooth.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- For the filling, combine the packed brown sugar and ground cinnamon in a small bowl.
- Spread half of the dough on parchment paper, sprinkle with the filling mixture, and roll it up tightly.
- Slice into 1-inch rounds and place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes until the edges are golden brown.
- Let them cool on a wire rack.
